Fourth of July (July 4, 2012) week is best spent with family and friends. Sometimes it involves travel; this year my family is gathering together at the Beach in Virginia with grandparents at their summer home. There's going to be a crowd for a week. We eat in and cook every meal together. I like to bake treats before we leave, and bring them. I start the week before.
At our detination, my mother-in-law will be making my Red Velvet Peppermint Ice Cream Chocolate Glazed Cake Roll Recipe for our July Fourth celebration!
Great keepers are what I like to call "quick-cakes". I bake my Carrot-Orange Quick-Cake and my Festive Zucchini Lemon Quick-Cake Recipes. Both feed a crowd and are excellent keepers. They make an exceptionally moist and wonderful all-purpose party cakes for casual dining and as every day snack cakes.
I am going to try my Baked Hand-held Pancake Recipe on everyone. Thank goodness I invented something where I (and the other Fourth of July food cookers) don't have to stand over the stove making tons of pancakes while everyone is in the other room. Everyone is eager to try them!
I packed a bunch of Alfajores or Dulce de Leche Sandwich Cookies for the 7 hour drive from New York City to our destination. I can't stop eating them, and I hope they make the long trip. I had better pack them out of sight!
If I have the time, I will also make the Grown-up Pop Tarts Recipe - another winner! They can always be reheated at our destination.
I am going to make the Grittata Breakfast Casserole and the Maple-Glazed Bacon Recipes while I am there. Both are so easy and I know everyone will just love the recipes, and they feed a hungry crowd. Easy does it cooking! is always our motto for the beach.
By the way, my Father-in-Law loved his gift I made him - the Sweet and Spicy Szechuan Mixed Nuts - for Father's Day! I have an extra batch or two I will also pack in the car, just for him and my husband as a surprise! They've been hinting about my making them more. Apparently, my father-in-law reports that they're especially good with beer - and the beach!
And, if I have forgotten anything, thank goodness baking911.com is online because I can access it with my iphone or ipad and find any recipe while I am away!
