I have tried several Angel Food Cake recipes over the years, at least 5 or 6. They are similar in ingredients with slightly different amounts but I have to say, I found my favourite one a short time ago. It is from "Martha Stewart's Baking Handbook", Clarkson Potter Publishers, 2005.
