New Years

News Years is a time to celebrate, not only for the year that has just passed, but for a chance to start anew.  Whatever the sentiment, I always love to serve a special dessert around midnight, even if it's just for my immediate family.

Have a safe, healthy, happy and peaceful New Years !

New Year's Eve:

Before you start, you may want to select other baking recipes, not mentioned here. There's lots to choose from and some are new. Below, are some of my suggestions...
This year, we are spending the event at our next door neighbors, with all of our assorted kids that make up our blended family.  This year I have decided that I will make my favorite Tiramisu Recipe.  What I like about it is that not only is it a bit hit, but I can make it in advance, and it's easy--my type of dessert !!  When putting the cocoa powder on top, I sprinkle it through a hand cut stencil of a star  or a heart.
Make truffles for New Years! For proper chocolate tempering techniques, the premiere American chocolate maker Scharffen Berger recommends the cooking site at www.baking911.com, besides their own! See the Contra Costa Times article AND recipe.
Speaking of hearts, I created the Reduced-Fat Tiramisu Recipe--which is the version I am really going to make.  My husband and I are always watching our health and our weight, so this will be perfect.  We can start out the new year on good footing.  And, besides it tastes like the full-fat version, so no one will suspect.

Always sensational for New Years is the Homemade Fresh Coconut Cake with Fluffy White Frosting.  This needs to be assembled and frosted within eight hours before serving.  I make the cake layers in advance, freeze them, and then thaw on the day when putting everything together.

A family tradition has been to make my mother's recipe, Priscilla's Chocolate Fudge Layer Cake. (I also have a reduced-fat version).

How about an old-fashioned cheesecake?  Of course, there's a reduced-fat version.

There is added coffee in the cake, which paired with the chocolate, gives a vibrant mocha taste. I made it for the previous New Year's Celebration.

How about making a Deep Dish Pear Pie With a Rum Raisin Sauce. It's perfect to serve along with any New Year's Eve dinner.

Café Brűlot Chiffon Pie is so elegant to serve, even when you are toasting in the New Year !

New Year's Day:

If you are like me, I always serve a nice French Toast with leftover Egg Nog !! I think I'll try it this year. Follow any French Toast Recipe and replace the milk and eggs with the egg nog.
It's fun to make crepes with all sorts of fillings. But, I'll be the first to admit, it takes practice to make them right. So, I have included all of my crepe making tips to help you along the way.
Even homemade pancakes and waffles are always a hit.
I make muffins and Some recipe suggestions are:  Jordan Marsh Blueberry or Morning Glory Muffins. I premeasure all of the ingredients the day or two before, and combine them the day of baking.  (Don't make the batter in advance). You can also bake muffins and cakes in advance and freeze them, but I like mine freshly made.
Even though my husband and I try to watch our weight all year, we always feel compelled to start the new year with healthy foods.  I have an abundance of recipes that bake with applesauce and are so moist.   My favorites are: Basic Muffins, made as mini-muffins in multiple flavors, or Pumpkin Chocolate Chip Ring (or the Apple Spice Walnut Variation). (Note: You may find low-fat baked goods a little sticky on top if baked 2 days ahead and stored at room temperature. It's because the applesauce has properties which draw moisture from the air. They will be just fine, or you can freeze them).
