Coffee cakes are typically single layer cakes that may be square, round, loaf-shaped or rectangular like a Stollen. They usually contain nuts, fruit and flavorings, such as cinnamon. They are often topped with a crumbly or crumb topping called streusel and/or a light glaze drizzle. They may be mixed by the Muffin Method or by following the indivudal recipe instructions, and are leavened with chemical leaveners such as baking powder and/or baking soda. Some similarity to teacakes may be found, though teacakes are often smaller individual items served with tea, and coffee cakes are best served immediately after baking. Coffee cakes may also be made from yeast doughs, and are not considered quick breads.
