(Italian Flatbread) Recipe

This Italian flat bread
is made simply with flour, salt, water and lard and fried on a griddle or
cast iron pan. It is great to use as a sandwich for cured meats and cheeses.
I like to add a peppery salad such as arugula for contrast. |
 | 3 Cups of All-Purpose Flour |
 | 6 Tablespoons of Lard or Shortening |
 | 1/2 Cup Warm Water |
 | Salt |
Combine the flour with about a teaspoon of salt
in a large bowl. Make a hollow in the flour and add the lard and the water. Mix
well and knead on a lightly floured surface until smooth and elastic. Cover for
about 45 minutes. Knead again and divide into 10 equal pieces. Sprinkle with
flour and roll out into a 6 inch wide circle, about 1/4 inch thick. Pierce with
a fork and cook on a griddle or in a cast iron frying pan for about 2-3 minutes
on each side. Serve warm with cured meats and fresh cheeses.
Remove, brush lightly with olive oil, sprinkle
with fresh chopped rosemary and salt and return to the oven for a few minutes.
Serve warm.
