Fruit Parfait Dessert

Recipe

Serves 4

I always make this dessert when I have left over fruit. My family never tires of this because it is so light and refreshing.  
bullet 1 envelope KNOX Unflavored Gelatin 
bullet 2 cups fruit punch or other fruit juice, divided 
bullet 1 cup cut-up mixed fruit pieces (strawberries, melon, banana or raspberries)

Sprinkle gelatin over 1/2 cup fruit punch in small saucepan; let stand 1 minute. Stir on low heat until gelatin dissolves, about 5 minutes. Stir in remaining punch. Refrigerate, stirring occasionally until mixture is consistency of unbeaten egg whites.

Place 1-1/3 cups gelatin mixture into small bowl; stir in fruit pieces. Spoon into 4 (8-oz.) parfait glasses.

Spoon remaining gelatin into small mixing bowl. Beat with electric mixer on high speed until light and doubled in volume. Spoon over gelatin in glasses. Refrigerate 2 hours or until set.
