Hi,

I would check with your oven manufacturer. In general, the fan should not be turned on when baking cakes, and the heat source should come from the bottom. That's how a conventional oven works. 2 and 3 does NOT sound like a conventional oven.

Mine has developed a lovely patina over the years, and rarely leaves the oven. Always clean while still hot, with Kosher salt and paper towels Same way as you clean uncoated cast iron. I only use mine for pizza and crusty bread loaves, like baguettes and sourdough boules.
Why did you feel the need to get one for other sorts of baking? Did someone suggest it to you?
